Khao Sō-i: Japanese-Refined, Modern Khao Soi in Bangkok

Khao soi (ข้าวซอย) literally translates to “cut rice” in Thai—from khao (rice) and soi (to slice or cut). Despite the word “rice” in its name, this famous Northern Thai staple is actually a coconut curry noodle soup made with soft wheat egg noodles and crowned with a nest of crispy fried noodles. After being ranked the number one best traditional soup in the world and a top global noodle dish by TasteAtlas, I’ve had many visiting friends ask where to get a great bowl while in town.
Over the past year, I couldn’t help but notice long queues forming outside Khao Sō-i at Siam Paragon and Central Rama 9. Originally launched in Chiang Mai around 2020–2021, this Northern Lanna noodle brand made a massive splash when it expanded to Bangkok with its first standalone Silom branch in October 2023, followed by several major mall locations.
With Bangkok’s food scene being so dynamic, I didn’t rush to join the queues right away. “It’s just khao soi after all,” I thought. But after trying both takeaway and dine-in experiences, I can see why this modern, elevated take on a classic is winning people over.
⏳ Takeaway vs. Dine-In: A Note on Waiting Times
My first experience was ordering takeaway in person around 11:15 AM. The staff estimated a 10-minute wait, but it ended up taking a long 30 minutes. When I returned, the order still wasn’t ready, though the staff were very apologetic. Looking around, I saw dozens of delivery riders waiting—and some complaining—which made it clear that online delivery orders flood in long before the lunchtime dine-in crowd even arrives!


When we returned for a proper dine-in meal, we arrived close to 11:45 AM to find many tables already eating well before the official lunch hour rush. We were initially seated in front of the open kitchen before moving to a proper dining table once a group cleared out. Watching the endless stream of order slips print out at the counter, it was obvious how busy the small team was.
You scan a QR code at your table to view the digital menu, but a staff member comes over to take your order directly in person. Our food took about 20 minutes to arrive, with staff being very attentive and polite about the slight delay.
💡 Portion Tip for Light Eaters: Bowls come in Small and Large sizes. As lighter eaters, we found that even the Small bowl is quite generous—especially given the richness of the curry broth! On a previous takeaway order, my husband and I shared a single Large bowl, which worked out perfectly. Since there doesn’t seem to be a minimum “one bowl per customer” rule, sharing a Large bowl or opting for small sizes is the sweet spot for lighter appetites.
🥢 Soup vs. Stir-Fried: The Tasting Verdict



Thanks to my niece’s treat (a total of 650 THB for three people!), we got to sample both the classic soup and the dry stir-fried (ผัดแห้ง) versions.
- The Noodle Texture: Unlike traditional khao soi made with flat, wide egg noodles that can easily get soggy, Khao Sō-i uses a round, ramen-style noodle with a wonderful al dente chew and bite.
- The Broth: The curry soup here is noticeably richer, thicker, and creamier than standard Northern stalls. Both my niece and I absolutely loved the luxurious, velvet-like texture of the broth. My husband, however, still leans toward the traditional, lighter, and more herb-forward style of khao soi broth.
- The Stir-Fried Version: While full of flavor, I found the stir-fried version a tad too salty for my taste. Hands down, the signature soup version remains my top choice!
- Vegetarian Option: They cater to non-meat eaters with a Tofu Khao Soi starting at 149 THB.
Best of all, extra broth and side condiments are refillable! Their condiments also feature a nice modern twist: instead of standard pickled mustard greens, they serve a thicker-cut yam (salad-style) pickled mustard green tossed with chili.
🌐 A Brand Built to Go Global

Pronounced “Khao-So-i” with a subtle Japanese flare, the brand gives off a sleek, Japanese-inspired aesthetic—from its original Chiang Mai flagship to its presentation bowl sets and cutlery choices.
Listening to media interviews with the founders, the backstory behind the brand is fascinating. They deliberately set out to modernize khao soi for younger generations and international palates—crafting a broth that is 4 to 5 times thicker than traditional recipes, pairing it with artisanal ramen-style noodles, and curating an elevated dining narrative. (And if you’re not a noodle eater, they also offer rice dishes on the menu!).
They’ve even expanded internationally with a location in London! Seeing a Thai brand thoughtfully re-engineer a regional comfort dish and bring it onto the global stage is truly inspiring.
